Recommended wine and cheese pairings

One way of achieving a harmonious pairing of wine and cheese (or any other beverage, such as beer or cider) is to stick to a same or similar terroir across the board. As with cheese, wines express the distinctive flavour and character of the terroir on which they were produced.

A good wine and cheese pairing is a matter of personal preference - some people enjoy dry white wines with mild cheeses and sweet white wines with stronger flavoured cheeses for example. The acidity in white wine is a perfect match for that found in cheese.

Red wine tannins, on the other hand, compete more with the cheese's strength and therefore require careful pairing.
